Town & Country Markets Launches Field House, a Market-to-Table Restaurant Concept

Town & Country Markets, a Seattle-area grocery chain, has introduced a market-to-table restaurant called Field House in its Mill Creek, Washington, location. The grocery chain partnered with chef and restaurateur Ethan Stowell to develop the menu, which features “classic favorites” using seasonal ingredients and regional purveyors. Field House had its grand opening on July 19, and Town & Country Markets plans to expand the concept to its Lakemont and Poulsbo locations in Washington.

Enhancing the Grocery Shopping Experience

Town & Country Markets aims to enhance the grocery shopping experience with Field House by showcasing the high quality of its ingredients. “We’re passionate about food at T&C, and Field House allows us to create a real sense of place by bringing our best foods and the community together,” said Ryan Ritter, CEO of Town & Country Markets.

Diverse Menu Offerings

The Field House menu offers a range of dishes including pizza, burgers, sandwiches, and specialty entrees like smoked brisket tots, a sockeye BLT, and Dungeness crab cakes. It also features a kid’s menu with chicken strips, fries, and cheese quesadillas, as well as a weekend brunch menu with items such as Macrina cinnamon rolls, Nutella pancakes, and a smoked salmon and spinach scramble.

Chef Ethan Stowell’s Expertise

Ethan Stowell, a James Beard Award-nominated chef with a portfolio of over two dozen restaurants in the Puget Sound region, designed the menu and will provide hands-on training to ensure a high-quality hospitality experience.

Honoring the Founders

Field House’s name pays homage to the founders of Town & Country Markets—John and Mo Nakata and their friend Ed Loverich—and their family’s Middlefield Farm on Bainbridge Island.

Trend of Expanding Foodservice Options

This launch reflects a broader trend among grocers to expand foodservice options. For instance, Macey’s Market Little Cottonwood in Sandy, Utah, recently introduced White Pine Sushi, offering a full menu of Japanese cuisine. Walmart is also increasing its in-store restaurant partnerships, with plans for Mr. Gatti’s Pizza and expanded poke restaurant options through Uncle Sharkii Poke Bar.
